Rutabagas are an excellent source of antioxidants, including vitamins C and E and fiber.

 

 

Celeriac– is a plentiful source of vitamins C and K, which can help support heart and bone health.

 

Ok here’s the soup I made. It was a little iffy but I had some folks try it out so I think it’s alright. Here’s the root veggie soup recipe.

Let’s call it from the dirt Soup:

  • 1 chopped Celeriac 
  • 4 chopped Potatoes
  • 1 chopped Rutabaga
  • 1 chopped Onion
  • ( slowcooker with 2 cups of water or until its 3/4 filled)

After top ingredients are soft- 8 hours in slowcooker.. Blend in the rest of the ingredients

  • 1 Garlic clove
  • 1 Hot jalapeno ( optional kick)
  • 1 tsp Cinnamon
  • 1 tsp Salt
  • 1 tsp Pepper

Garnished with whatever you like. I added sour cream and a few strips of bacon and that was amazing!
