It’s that time of year where the treats are abounding everywhere. I love them too but I encourage you to make treats that are yummy but also filled with vitamins and nutrients.
This banana bread is stacked with Vitamin B, Potassium, fiber, protein, ALA, and more. I hope you enjoy.
Banana Bread (Naturally Sweetened)
Ingredients
3 very ripe bananas (the riper, the sweeter)
2 large eggs
1/4 cup melted butter or coconut oil
1 tsp vanilla extract
1 cup all-purpose flour
(or use whole wheat for healthier, or gluten-free blend) I use organic whole wheat flour- 1/2 cup
- ground flax
1 tsp baking soda
1/2 tsp cinnamon (optional but tasty)
- 1/2 tsp cloves
1/4 tsp salt
1/4 cup unsweetened applesauce (adds moisture + natural sweetness) or Molasses
Some of my favourite add ins:
1/2 cup chopped nuts
Dates
1/3 cup blueberries
- Goji berries
Instructions
Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment.
Mash bananas in a large bowl until very smooth.
Whisk in eggs, melted butter/coconut oil, applesauce, and vanilla.
In a separate bowl, mix flour, baking soda, salt, and cinnamon.
Combine wet and dry ingredients—do not overmix.
Fold in optional nuts or chocolate chips.
Pour batter into loaf pan and smooth the top.
Bake 45–55 minutes, or until a toothpick comes out clean.
Let cool 10 minutes before slicing.
Tips for Best Results
Use bananas with lots of brown spots—they provide the sweetness.
For extra sweetness without sugar, add ¼ cup mashed
Freezes beautifully for up to 3 months.
